Meet Samantha Penlington, A Registered Dietitian specializing in Endometriosis Diet in Ontario, Canada

Hey, I’m Samantha

I’m a Registered Dietitian.

I’d offer you Chai Latte or champagne, but since we’ve just met, I’m not sure what foods exacerbate your endo symptoms 🙃.

Before getting into nutrition, I was a Registered Nurse. I like to joke that all my health and healthcare education was just a prep-work for my endo diagnosis because I can’t imagine how hard it would be to deal without it.

When my doctors first told me I likely had endo, I was in major denial. I refused to believe that I had it. After requiring laparoscopic surgery in 2017, my OB-GYN informed me that she had taken a biopsy and confirmed my diagnosis of endometriosis.

Welp, there went denial as a coping mechanism.

Once I was out of the denial stage and After my diagnosis, I was tried on almost every type of hormonal therapy to control it. Although I desperately hoped one would work, none of them significantly helped my symptoms and instead gave me significant side effects,

While waiting to get excision surgery, I decided to do some research of my own.

I quickly learned that many people with endo had some or significant relief from endometriosis using lifestyle interventions.

For the past 4 years, I have used my nutrition expertise and (a lot!) of trial and error to minimize my symptoms. The biggest relief I’ve experienced from my symptoms has come from proper sleep, dietary modifications, and stress management.

Dietary changes cannot cure endometriosis or guarantee that you won’t have a “flare”. However, exploring dietary modifications alongside other medical and surgical interventions could be instrumental in helping minimize symptoms of pain, bloating, and GI distress.

I hope I can play some small part in your endo treatment by offering you guidance on your nutrition.

I share all my favourite recipes that are packed with nutrient-dense, whole foods that aren’t only helping in managing chronic inflammation, but also are delicious. *chef’s kiss*. Knowing exactly how it feels to struggle to get out of bed some days, let alone cook a gourmet meal each night, I also make many prep-ahead recipes that are freezer-friendly. Because it’s important to take advantage of the days that you feel good.
